Summertime Favorite - Cold Noodles

Cold noodles or delicacies alike are enjoyed throughout the world. Especially during the summer, cold noodles become a popular dish for the people of China. Now comes the question, how many kinds of cold noodles do you know?

Shanghai Cold Noodles  上海冷面
Refreshing, in a Simple Way  简约,清爽

The traditional Shanghai cold noodles are placed next to an electric fan after steamed. While the noodles are cooled, seasonings are added, such as peanut butter and vinegar. You may ask for additional toppings. Toppings come in many varieties, similar to the dishes of a menu, but in a lesser quantity.
传统的上海冷面是将面条蒸熟后,放在电风扇下吹凉,然后加入调味料,其中花生酱和醋更是必不可少的“制胜法宝”。这样的一份冷面还可以加上各种浇头,其种类类似于各种炒菜,但是加入的量不会太多,恰到好处即可,一份简约又清爽的上海冷面便成为了本地市民每年夏天盼望的凉食佳品。



Naengmyeon  朝鲜冷面
Full of Flavors  味觉盛宴

Naengmyeon is a Korean noodle dish of long and thin handmade noodles made from the flour and starch of various ingredients, including buckwheat, potatoes, arrowroot starch, and kudzu. Naengmyeon is served in a large stainless-steel bowl with a tangy iced broth, julienned cucumbers, slices of Korean pear, thin, wide strips of lightly pickled radish, and either a boiled egg or slices of cold boiled beef or both. Spicy mustard sauce and vinegar are often added before consumption.
朝鲜冷面是一道传统的韩式面食,手擀的细长面条用多种原料制成,包括荞麦、土豆、竹芋粉和野葛等当地特色食材。朝鲜冷面配上口味浓郁的冰镇面汤,加入黄瓜丝,梨片,腌萝卜薄片,还有煮鸡蛋或白切牛肉等等一系列食材,放入一个不锈钢大面碗中,最后加入芥末酱和醋等调味料,一场夏日的味觉盛宴就此展开啦。



Liangpi  凉皮
Not Only in Summer  绝非“夏日限定”

Liangpi is a noodle-like Chinese dish made from wheat or rice flour. It is a specialty dish originating from the cuisine of Shaanxi Province, but has now spread to many other places in China, in particular the northern and central regions. Although liangpi is served cold, it is served in every season, including winter.
凉皮名字里没有“面”,这种形似面的食物用小麦或米粉制成。作为陕西的特色美食之一,凉皮现在已经风靡中国的大江南北,各地开花,在北方和中部地区格外受到欢迎。尽管凉皮是冷着吃的,但是一年四季食用都无妨,冬天也可享用。


There is one exception – Hanzhong Liangpi, or Hanzhong Mianpi. Named for the city of Hanzhong in southwestern Shaanxi, Hanzhong Lianghpi is steamed with garlic and hot chili oil. Unlike other places, it is often served hot rather than cold.
凉皮中还有一个例外,那就是汉中凉皮,或称汉中面皮,起源于陕西省西南部的汉中市,以蒸凉皮配上大蒜和热辣椒油制成。和其他的凉皮不一样,这种“凉”皮通常是热食的,算得上是凉皮界的“离经叛道”之徒。

Salad or Pasta?  到底是沙拉还是意面?

Pasta salad is a salad-like dish prepared with one or more types of pasta, almost always chilled, and most often tossed in a vinegar, oil, or mayonnaise-based dressing. It is typically served as an appetizer, side dish or a main course. Pasta salad is often regarded as a spring or summertime meal, but it can be served year-round. There is a debate regarding whether pasta salad is truly a "salad", given that the base is pasta rather than a vegetable.
沙拉意面是一道形似沙拉的意面,用一种或多种不同的意面,冷却后加入醋、油、蛋黄酱等调味料混合制成。沙拉意面通常作为开胃菜或小菜,也可成为一餐中的主菜。作为春夏季节的时令美食,沙拉意面亦可全年享用。此外,沙拉意面的“身份问题”一直很难得到解决,由于它的基底是意面而不是蔬菜,因此它到底能不能算上是一道“沙拉”,人们还为此争论不休。
